I cured some wild sockeye salmon in fresh dill, coase sea salt, whole black pepper and Gin. Yes Gin. In 3 days i will rinse and slice very thin. This is very tasty on bagel and cream cheese.
Well I left the salmon cure a little to long but soaking it i water for 30 min toataly helped dilute the salt. it tasted so good.

Took some purple.red and white new potatoes sauteed bacon and onions to make a hash. gently placed the steak on and topped this with an Hierloom cherry tomato, fresh herb salad. Simple and very tast
